You will study two subject specialisms comprising Food and Beverage Service, this is aimed to give you the full opportunity to develop your skills in the kitchen and the front of house service. You may then be able to progress onto either Level 3 kitchen or Level 3 supervision. This course develops your culinary knowledge and skills, working with a wide range of ingredients and modern techniques. It is the natural progression from our Introduction to Food and Beverage. You will gain practical knowledge in a range of areas, including: kitchen organisation, menu planning, restaurant service, workplace skills and a full range of food skills. You will also study theoretical units, as well as producing fine dining from our established restaurant and lounge bar.
The course is assessed with unit tests to underpin the knowledge learnt and through practical tests in our commercial kitchen; these are then evaluated and signed off by the assessor.
You should have attended a successful interview with satisfactory references, providing information on behaviour, punctuality and attendance and meet one of the following entry requirements:
A minimum of 4 GCSEs at grade C or above, including English and Mathematics
A Level 2 vocational course at Merit or higher (if a pass grade is achieved GCSE grades and/or functional skills results can also be considered).
You will also be required to undertake an initial assessment at the appropriate level (English and Mathematics assessed at Level 1 or above).
